VINIFICAZIONE: pressatura soffice delle uve, e a seguire fermentazione sulle bucce (per circa 12 ore) al fine di ottenere una leggera nota rosata.                       PROCEDURE: soft pressing of the grapes followed by a 12-hour skin contact to get the pink light colour
PRESA DI SPUMA: la rifermentazione e maturazione sui lieviti avviene in bottiglia per un periodo variabile dai 24 ai 60 mesi sulle pupitres. Dopo la sboccatura, inizia l’invecchiamento prima della commercializzazione.                                                                                                                                              REFERMENTATION: in bottle together with the yeasts for a period which ranges between 24 and 60 months. CARATTERISTICHE: colore rosato più o meno accentuato, perlage delicato caratteristico della rifermentazione tradizionale, profumo deciso e complesso, in costante evoluzione.                                                                                                                                                                                             CHARACTERISTICS: light/darker pink colour, delicate perlage very characteristic, intense and complex nose, very long and rich in mouth.
