VITIGNO / GRAPE: Pinot Noir.

ETA’ IDEALE: medio – lungo invecchiamento                                                                                                                                                                                AGING: suitable to medium – long aging.

VINIFICAZIONE: pressatura soffice delle uve, il mosto viene immediatamente separato dalle bucce, e si ottiene cosi’ una vinificazione “in bianco” da uve nere. La fermentazione avviene in vasche d’acciaio a temperatura controllata.                                                                                                                                         VINIFICATION: soft pressing of the grapes, and then the skins are immediately taken away, so to obtain a perfect “Blanc de Noir” juice, which will be fermented off skins in stainless steel tanks.

PRESA DI SPUMA: la spumantizzazione, chiamata anche rifermentazione, avviene in bottiglia ed e’ seguita da una prolungata maturazione dello Spumante a contatto con i lieviti (36 mesi solitamente), seguita dal “remuage sur pupitres” e conseguente sboccatura (degorgement). Prima di ritappare la bottiglia, si aggiunge la liqueur d’expédition e si lascia invecchiare.                                                                                                                                                                       SECOND FERMENTATION: also called refermentation, happens in bottle, takes long (usually 36 months) when the yeasts will carry on the evolution of the wine , to end with the bottles upside down (also called “remuage sur pupitres”) before the uncorking. This is a very delicate procedure which consists in opening the bottle after neck-freezing, getting rid of the deposit (yeasts), refilling with liqueur d’expédition made of a secret long-established family recipe, and finally recorking with a natural cork, and then aging again.

CARATTERISTICHE: colore giallo paglierino, perlage fine, bollicine numerose e persistenti; profumo delicato, complesso, in continua evoluzione. Il gusto risulta pieno, gradevole, ben equilibrato, armonico.                                                                                                                                                                         CHARACTERISTICS: straw yellow colour, fine perlage with long persistent little bubble chains, delicate and complex smell, in constant evolution. Rich taste, harmonious, long in mouth, good balance, long life potential.
